This is chestnut tannin. Most commonly, tannin from walnut is sold, which is mainly refined tannic acid—a functional ingredient that improves clarification and stabilises wines, while also adding astringency and helping with mouthfeel.
Chestnut tannin does all of this, but adds another dimension.
Chestnut tannin has more flavour and aroma-enhancing properties, in addition to astringency, and is therefore especially well-suited for use in red wines and dark spirits to enhance the flavour and aroma profile.
